Most places won't accept Visa/Mastercard. Some big hotels or attractions might, but the average shop won't.

Most people in China use WeChat to communicate and pay for things, but the payments are difficult to set up without a Chinese bank account.

Alipay's currency converting fee is very low and no transaction fee, here's the screenshot comparison from the Bank and Alipay, the rates varies, but currently sitting around 100NZD to 410-420CNY.

You can use either cash, or AliPay - which is a bit like Google/Apple pay here.
